Goji Berry Recipes
Get Up And Goji:
Ingredients:
- 1 large handful of goji berries
- 1 scoop of creatine
- 16 oz of water
- 1 spoonful of honey
Directions:
Blend on high for 45-60 seconds. Add 2-3 ice cubes, blend again on med/high for 30 seconds. Pour into a glass and drink to your health!
Goji Berry Yogurt Bliss:
Ingredients:
- 1/4 cup of goji berries
- 1/2 cup of yogurt
- 1/4 cup of granola
- 1 tsp of maca root powder
Directions:
Stir above ingredients until all maca powder is absorbed. Fold in 1/2 cup of fresh fruit.
Goji Energy Bars:
Ingredients:
- 1/2 cup of raw pine nuts
- 1/4 cup of soaked buckwheat
- 1/4 cup of honey
- 1 cup of raw pumpkin seeds
- 1 cup of raw almonds
- 1/3 cup of goji berries
Directions:
Soak buckwheat for 8-12 hours. Change soaking water at least once. Drain all well. Put pine nuts, buckwheat, pumpkin seeds, almonds, and goji berries into a blender or food processor and blend for a few seconds on low. To leave chunky, I divide the mix to blend half at a time.
In a bowl, mix these ingredients with the agave and add a little more water to moisten if needed and add more dried goji Berries.
Mold the mixture into energy bars. Use cookie molds or make balls with your hands or use a fork on a plate to make compact energy bars. Let sit for a while.
High Protein Goji-Carrot Cake:
Ingredients:
- 3 cups of wheat bran or oat flour
- 1 tbsp of vanilla pudding mix
- 2 scoops of vanilla protein powder
- 1-2 tbsp of stevia
- 1/4 cup of almond milk
- 1 tsp of vanilla extract
- 8 egg whites
- 8 oz of shredded carrots
- Ground cinnamon and nutmeg
- 1/2 cup of goji berries
Directions:
In a large bowl, combine all ingredients and mix with whisk or fork to make sure protein powder is completely blended. Spray a loaf pan with cooking spray. Pour batter into pan.
Bake at 350 degrees for 35 to 40 minutes. For an extra fun treat, top off each slice with some non-fat, non-dairy whipping cream or non-dairy ice cream.
