Ingredients

  • 1 tsp vegan butter spread
  • 1 tsp natural almond butter
  • 1½ cup fat-free cottage cheese
  • ½ tsp baking powder
  • ¾ cup unsweetened almond milk
  • 1 tbsp chia seeds
  • ⅓ cup oat bran

  1. Blend the oats and transfer them into a small bowl. Add the chia seeds and baking powder and mix.
  2. Stir in the almond milk. (Optional: Add cinnamon and vanilla)
  3. Add vegan butter to a hot pan, and add the batter. Scramble the pancake until it’s done, for about 2-3 min on medium heat.
  4. Transfer into a bowl, and add the cottage cheese as a side. Melt the almond butter and drizzle on top.
